2005 Chevy Impala ovewrheating

Occasionally the car temperature indicator shows it to be overheating, however, when checking under the hood, no indication that the engine is hot. Could this perhaps be a sending unit defect?

Have you checked the actual temperature at the thermostat housing with a thermometer (infrared thermometer)?
The same reading would rule out your coolant sensor.
If you have a scanner that reads sensors input, you could also hook it up and compare the temp reading received by your pcm and the reading you get from a thermometer.
You need to find out for sure if your car is indeed overheating when the temp gauge goes up.
