coolant level light stays on, jumped out wire harness, checked switch both ok. Light still on

U should not try to bypass the switch

PCM look for a resistance from the switch

If equipped Engine Coolant Level Switch is located On Coolant Reservoir
use an OBDII reader and check for codes do you have any (p1881, p1882, p1883, p1884)
I would clear the codes and start engine and check for codes again
