Car starts with no issue and drives, but after a couple blocks it'll start to run rough and then the rpm will go up and down and then the car will start to shut down and then I can't restart it. After a couple hours I can start it and keep doing the same thing.

Hi,

It sounds like an issue with the crankshaft position sensor. When they start going bad, heat causes them to fail. As a result, you need to allow it to cool for it to restart.

Take a look through these links. The second link shows common symptoms. See if they mirror what you experience.
