My a.C. Pulley seized up last night and after looking into getting it fixed, found out they don't sell replacement pulley for this car in spec. I was wondering if it would be possible to bypass the a.C. Altogether to save money and headache? What size belt should I use and how do I replace the belt(order of pulleys)?

You could pick up a pulley from a local pick and pull yard if you wanted. Or have a new compressor installed.

I've attached the OEM belt routing diagram. I couldn't tell you what size belt to get. The best I can do is tell you to find the circumference of the A/C pulley and multiply it by about.667, then subtract that from the OEM belt size. However, I can't guarantee that would work. You still need the belt to go around the upper part of the idler pulley just above the A/C compressor and below the alternator.
