Jeep Overheating

I drove my 1998 Grand Cherokee today usually my wife drives it. Stoped to gas up, did not shut off car. Finished pumping the gas and started to drive away the temperture gauge went all the way up and the red light came on. But when I started driving it went down to the middle and stayed there. My commute was about 45 minutes, it never went up again. My wife told me this happens so often, What could be the problem?
My water pump or the thermostat.

Are your fans coming on? Or intermittently. Coolant temp switch or fan relay

Maybe your radiator is restricted from deposits and needs professional cleaning to clean it up (auto store flushes, are not all that wonderful)

Maybe it's not overheating at all. Possible temp sending unit is bad

I only have only have one fan driven by belt. How do I do process of elimanation.
