87 Maxima running hot

1987 Maxima New:Radiator, Coolant, Radiator Cap, OEM water temp thermostat, water pump, timing belt, timing dead on, hoses, both the air conditioning and and engine fans work properly, no detectable exhaust gas or oil in the radiator, compression test all cylinders good yet still runs hot at highway speeds if the outside temp is 100F or higher. When this situation occurs the air out of the air-condition smells like rubbing alcohol.

What method did you use to determine that there were no detectable exhaust gas in the cooling system

It's a difficult thing to determine positively.
Make sure you have pressure tested the cooling system for leaks also.

What about the catalytic converter, could this cause this problem it it is degraded and partially plugged?

No, not likely. It would create a whole new set of issues that would overshadow any overheating.
