Engine shuts off randomly

Bought this vehicle from a family in Oregon. Put about 2,000 miles on it before driving it back to my parents in Colorado Springs.
Before the road trip, It would randomly just shut off while idling while parked, not driving (only 1-2 times).
Made it to Moab with no noticeable problems. Leaving there driving on the highway about five minutes after it was started and I got on the paved highway, I noticed the engine lose power, like it was choking. When the car loses power the engine temperature gauge goes crazy, the battery meter jumps around a little. But after another couple minutes, it warms up and drove all the way to Denver with no issues. When driving around in the city going from light to light, the car will shut off sitting at a light. If I put it in park, I can restart it with no issues. I am still in Colorado. I took out the throttle body and cleaned it thoroughly and reinstalled it correctly. Noticed the performance increase. Still shuts off intermittently at lights. It shut off while driving a couple times, starts back up every time I just have to pull over and put it in park.
I plan to replace the fuel filter next, maybe run some high octane gas through it. Any ideas or insight would be very appreciated.

Hello, I am Danny.

Just a few questions first. Because of this issue is the Check Engine Light on? Also, I would suggest performing a fuel Pressure test. Your fuel pump could be weak or failing.If you do not have access to a tester your local auto parts stores have a loaner program and can rent you one. Your pressure specifications are 55-62 P.S.I.
