Vehicle listed above an EX model with both technology packages, and I am looking to add some sill plates, specifically:

https://www.k5optimastore.com/collections/2016-kia-optima-product-collection/products/2016-optima-sequential-door-scuff-plates

Any help with a wiring diagram, or any other tips about where to tap in for the power and ground. My car comes standard with door handle lights that light up when you approach/unlock the vehicle and the power mirrors auto tilt back out.

Looks like install instructions are here:

However I would not use the scotchlock type tap connections, I would instead strip some of the insulation off the wire, then wrap the power and grounds around the correct wires and solder them. Next use liquid electrical tape to seal the area to keep corrosion from destroying the wires.

It looks like you may have the correct wires to plug them in if the wiring diagram is correct. It shows red and blue wires for the drivers side and green and white for the passenger side. These wires would likely be within the reach of the connectors on the new plates.
