I own a nissan 240sx is an sr20det swap with about 60000 miles on it. While at idle the cars rpms stay at about 500-700 rpms, so it idles at a very low rpm. And sometimes when I am driving the car shuts off. When I restart the car it works fine, although the rpms are still very low. What could cause this problem?

Try adjusting a idle screw found on the intake side found by the fuel pressure regulator. Its very small screw, and not hard to miss. If that fails check to see if your fuel pump is working properly, if not enough pressure obvious low rpms.
