While driving down the interstate at a set mph and rpm, my car will randomly jerk. It also idles rough and the rpm's will drop sometime after pressing on the gas.

Start by checking the fuel pressure. Could be a fuel filter or the fuel pump.
Also, clean throttle plate on both sides and IAC hole with choke cleaner.

Would any of those set off the check engine light? Mine has not come on at all.

No low fuel pressure does not always set off a code like that. Or have a mechanic scan for codes and freeze frame and take readings of sensor maybe one is low.

Going to try these Friday, hopefully it fixes it. I was wondering, from the sounds of this could it be a transmission problem possibly? I am really hoping it is not.

I kind of doubt it but it is possible, but if an engine does not run right neither will transmission.
