What are some causes for my oil pressure to drop as the engine heats up which is eventually leading to the car conking out on me?

You need to actually check the oil pressure to confirm it that is low-could be the pressure sending unit is failing or the oil pump/worn engine bearings/clogged screen/sludge

As for stalling-could be the computer sensing the low oil pressure and shutting it down. Unless the oil pressure sending unit is tied into the fuel pump circuit like GM vehicles-
