When the engine is under stress, e.G, merging onto the freeway, the air flow and/or air conditioning cuts out. Ford is telling me that it's normal when the engine reaches 75%. I'm not sure what that means. I've never driven a V-8 before and this issue never came up with my V-6. Is this really normal?

It is a design of the wide open cutout to stop the A/C compressor during hard acceleration, but not the blower inside the vehicle. This would mean that under hard acceleration, the air would warm a bit until normal cruising again.
