Engine hot- A/C off, message appeared

It say engine hot- a/c off. Replaced coolant temperature sensor and it went away for a few days. Doesn't show up until car has been on for a period of time. Also RPM's bounce up and down now.

We need to suspect that the engine is actually overheating so here are some guides on where we need to start:

I would suggest letting the engine get warm and then do the head gasket test due to the bouncing RPM. We need to make sure the head is not warped before we go any further because if we do then nothing else matters until that is fixed.
