2000 Chevy Express sputter, stall and shut down after a com

Ive been though problem after problem since I got it a month ago the day after I fixed my universal joints it stalls on me its like im pushin the gas and its losing power the harder I push it doesnt do it all the the time but I would say a good 4 times in a hour it will shut down if I hit the gas too hard when trying to go uphill or even pull off fast what should I try first?

Is the check engine light on? You might want to put a fuel pressure gauge on it and drive it in those conditions.

Have you checked the fuel pressure yet? Also I would inspect the catalytic convertor if its partially clogged this can cause similiar issues
