During very cold weather my car would not start in the morning.

I checked spark plugs and when I pulled one of them out, there was lots of oil it it. Oil was on the entire plug. I don't know if oil was on the firing end of the plug but maybe so much oil was present that it dripped on the firing end as I pulled it out.

If I replace the gaskets, is there anything else I need to check?

You say there was lots of oil on it. Do you mean on the firing end or in the hole where the plugs are inserted? If you get a gasket for the valve cover the seals for the plug holes should come with it.

If the oil was on the firing end of the plug then that is another story that needs to be addressed.
