Driving on the highway engine dies, starts up 5 minutes later and drives fine for 2 weeks and then does it again

My first inclination is to look at the ECM wires and plugs. Is there any check engine light on? It really sounds like a wiring issue because of the randomness of it

Thanks for the response, there arent any check engine messages. I was thinking wiring or fuel pump issue? Is the fuel pump a possibility?

Fuel pump is definitely a possibility. When it dies take a long funnel and put it in the gas tank. If the pumps comes on when the key is turned to on, then youll hear a hum when you put your ear in the funnel. Also try keying off and on quickly several times next time it quits then crank it. That jars the fuel pump and can help diagnose a failing pump more easily
