2004 Chevrolet Tahoe OVERHEATING

Vehicle usually runs in normal operating temperature between 190-210. Lately the temperature has gone up to 230-235 while driving at speeds of 20-50mph. But when the vehicle is in idle the temperature goes back down to 210. I can be in idle with the A/C blowing full blast and temperature will not go past 210. The water pump and thermostat was replaced due to pump leaking.I checked the engine oil for coolant residue but found none. What can this issue be? Possible fan clutch?

What you described is the opposite of what a bad fan would do. Since the thermostat is new and the water pump is good, have you checked to make sure the radiator isn't plugging? Has it been flushed? Also, was this a problem prior to the replacement of the thermostat?
