My car was overheating and my check engine light came on, I put in some water and the light went off. But it is still HOT, could this be fixed by adding coolant?

There is a reason it was low on coolant because of a leak or because of the overheating caused a boil over. You need to have our car scanned for codes auto zone does it for free or other auto parts. Let me know the exact code numbers you have the letter and number only. Also when it was running hot was the radiator cooling fan on?
