Are you sure the engine is overheating? Did you bleed the air out of the cooling system when you replace the parts? When the low coolant light is on, are you actually low on coolant?

When the temp light comes on I can't accelerate past 50 mph but when the low coolant light comes on at the same time then I can accelerate past 50mph.

Replace the coolant temp. Level sensor. For starters its mounted in coolant jug.
