I had the clutch replaced. The pedal started low and after a week the pedal is now high. I return to where clutch was replaced. They advise that clutch is self adjusting and there is nothing they can do about the pedal height. Is this correct?

Tell them to readjust the free play and pedal height again and for them to quit beating around the bush-Self adjusting-my eye its very obvious that your not satisfied and there's something is still wrong-
