My GTP has had some cooling problems for about 2 months now. It would get hot, then cool down rapidly. We've replaced the thermostat and it still seems to do the same thing. What now could be the issue?

Make sure it is actually heating up, I use an infrared gauge and take readings, it could be the sender, is the cooling fan working? If it is actually running hot and cooling, the you may have air in the cooling system.

I believe it is because after it gets near the redline it'll still stay pretty high, then cool down close to where its supposed to be.

You might want to remove the thermostat and drill a small 1/4 inch hole in the flat steel part, this will allow air to pass thru and then you can remove the radiator cap to remove the air, or have the system drained and refilled with the special units avalable to fill tough airbound systems.
