why does my bonneville cut in and out? And once its started and start driving in cuts in and out and dies when I try to go faster? When I unplug the sensor that runs to the airfilter hose it runs a little better

The sensor you unhook is the MAF sensor, if the MAF sensor is dirty or faulty then the check engine light should come on and throw trouble code. Is the engine light on? If not then your issue may be a dirty fuel filter.
