If coolant is leaking then either it is being burnt or is simply leaking out. Is there any white smoke out of exhaust? The cylinder head itself may be cracked. Could also be faulty heater core.

No white smoke and they said the head was good when they replaced the gasket, also the van is not overheating but the meter in the van just stays at hot and runs out of coolent everyday

Check the coolant tank, it may be cracked and leaking or the low coolant level sensor/switch on teh coolant tank may be leaking.
