Why Does My Car Over Heat After Getting

That sounds like you could either have a blown head/intake gasket or a crack in the block/cylinder head.
Coolant getting into the oil will turn white. But oil getting into the coolant could stay brown because it doesn't get whipped up by the engine's internals.
It could also be the transmission fluid getting into the coolant because of an internal crack in the radiator.
What you're hearing in your dash is air bubbling through the coolant as it passes through your heater core.
The only way to tell for sure is to pressure check the system, do a compression check on the engine, etc.
