The dealership service center just informed me, during a regular oil change, that my left front strut was leaking and had lost all of the fluid in it. They wanted to replace it for $680 (that's including the other front strut because they replace at the same time). Is this something that needs to be done right away? I can't feel anything different or strange in my car. Also, is that a good price?

Are they replacing the full strut with strut bearings and coil spring? Or just the shock/strut absorber? That makes a huge difference on the price.

Yes, it is still 'safe' to drive it for now, but keep in mind that you may not notice it, but your vehicle will react a lot differently under hard braking. The nose may dive too low and you will not have proper handling characteristics as well. But for a normal commute it is still safe, nothing is going to fall apart on you, unless the coil spring is broken.
