When I stop, not depending on how long I've been stopped, the Jimmy kind of "jumps" when I press down on the acceleration pedal, sometimes for a while before deciding to actually accelerate. The pedal also seems to "stick" every time I first put my foot on it, but keep in mind it doesn't stick at all once I get the pedal past the resting point.

I don't know much about cars, but I think my dad told me something about a "throttle" setting under the hood (as I remember it anyway) when I was a little kid. That was on his car, not mine, so I don't know.

Sounds like carbon build-up inside the throttle body. Not hard to clean. Remove the air duct and use some carb cleaner and a plastic scraper to clean the carbon out of the TB bore.
