How do I stop paying attention to other drivers, even if it is extremely tempting to- such as by looking at the rearview mirror and/or side mirrors?

Hi,
That is a hard question for me to answer. I was taught to always know if there is a vehicle behind or beside you, so that would justify looking at all mirrors on a regular basis. However, when you check, it should be very briefly.

I learned in a similar manner to Joe. When driving I scan the mirrors and gauges in a pretty set pattern. Left mirror, gauges, right mirror, rear view back to the road. Only time I actually look at the drivers of the vehicle is if I'm doing something like changing lanes or turning, then it is to see if they are paying attention so there isn't an issue. Beyond that it's simply focusing on my driving so that I don't cause any accidents.
