2001 Chevy Silverado Rough Acceleration/Idle

I've noticed that since I put new spark plugs in my truck that during acceleration its quite rough, as well as with idling. It seems to studder/hesitate in the low RPM's (below 1500rpm) and while idling. The spark plugs I installed are NGK Iridium Tipped ones with the proper gap (.060in.) Nothing leaks, nor can I smell any weird smells. I thought it could be water in my fuel line/tank, bought some water remover and nothing. I also thought that maybe its one of the spark plugs, I checked them all out and everything looks fine. (There were a couple that where black, so I swapped them out with my old ones and nothing, same thing) I did use anti-seize on the threads of the plugs, but I only put it on the threads. I thought that maybe one of the plugs may not be fully inserted so I took them all out and re-installed them and tightened them. I checked the spark plugs' boots and they're fine, the coil inside is still crimped to the boot. I also suspect my fuel pump, when I accelerate I can hear the fuel flowing to my engine, usually happens only when its cold out (once the engine warms up it goes away) I hear it by the passenger side, down by the glove box. In the higher RPM's it runs fine, when I am idling, everyonce in awhile my gas gauge needle on my dash just drops straight to empty, that lasts for a little bit (its quite erratic, sometime only lasting a couple seconds to a few minutes) then it jumps back up to where its suppose to be (well in theory thats where it was before it dropped to empty) I hope this is enough information for you, and any help would be appreciated, thank you.

The noise you hear is probably air in the cooling system that is rushing through your heater core. The fuel gauge problem is a faulty fuel level sensor in the fuel tank. You might want to check out your plug wires real good. Ohm test them.(1000 ohms per foot)
