1995 Chevy Camaro Engine

My camaro started out running hot. I replaced the thermostat, and when I was filling it up with anti freeze, I noticed my freeze plug was leaking. I have yet to replace the plug, however, the car seems to be running very erratic. It will idle fine, but when I put it in gear, it starts to choke down. I can put the gas pedal to the floor, but it will not rev up. I have recently replaced all spark plugs and plug wires and fuel pump and filter. It should be noted that I had to remove the catylitic converter a few months ago.
Any Ideas?

I would check fuel pressure, it should be above 48 psi, also I have seen many driveabilty problems caused by low coolant level, the coolant sensor is designed to be in coolant, NOT hot steam, let us know what you find.
