Brake fluid dirty, how can siphon it out and replace it with new fluid?

How my vehicle inspected the mechanic says my brake fluid is dirty. Can I just siphon out whatever is in the reservoir and just add new, fresh fluid? I know this is something I can do, and not get a charge of $55.00 for the service. Seems very simple to do, what do you think?

Please don't allow the brake master to get so low on fluid that it sucks air in, that makes the job harder than it needs to be. Let us know if you need anything else.
