Shuts off while driving

My vehicle just stalls when I am driving and now it wont idle unless my foot is on the gas pedal. Sometimes it idles very low and sometimes very high. Last time I drove it it was hesitating couldn't drive up hill in first gear.

Based on your description, I question of the catalytic converter is plugged. Here is a link that shows how to check a converter:
