I have just changed the oil in my ford maverick 2.7tdi and I have white smoke spewing from the exhaust. Have I overfilled it?

Sounds like that or for some mysterious reason the head gasket or head cracked, Overfilling will hydraulically lock the motor and destroy it, DO NOT run it until you are sure of the amount of oil in it!

Why does this cause white smoke? Should I just drain some oil?

Oil is pushing, or trying to push past the oil and compression rings, you can try completely draining it, replace the filter and check the drained oil for metal particles or bits, this will indicate engine damage due to the locking effect.
