What sensor would keep my fuel pumps running and make my truck run rough and not want to start when cold

There are no sensors.

Start with a fuel pump pressure test. You can rent the tool at a parts store.

As far as the running rough, how long since the plugs/coils were changed? Is the check engine light on?

Replaced fuel filter, fuel pressure regulator, both fuel pumps, ignition switch and coolant temp sensor. Codes are 116 and 114

DTC 114
Intake air temperature higher or lower than expected

DTC 116
Engine coolant temperature higher or lower than expected

check the litle air sensor in the big hose for 114

coolant sensor on intake by the thermostat. Make sure the connection is good. It will cause all kinds of issues
