Which sensor will cause the car to die?

The fan keeps running and won't start unless I disconnect the battery which seems to reset the fan

the engine thinks it is hot and dies and won't start and the fan keeps running yet if I disconnect the battery, then reconnect the battery the fan doesnt come on and the car starts up

Does the temp gauge read hot? Is it really overheating?

The cooling fan relay may be stuck. The coolant sensor may be reading wrong as well. You need a shop with a scanner that will read these results.

The temperature reads fine the car isnt overheating and after I unhook the battery it seems to reset and the car will start up again but it does the same thing again

Brings it down to the coolant sensor. Get it checked out.
