2000 Honda Civic A/C turns off by itself

2000 Honda Civic 4 cyl Manual 87,000 miles

The car runs great and the A/C cools just fine. We live in warm climate so the A/C is mainly ran on high. Sometimes while driving, the A/C turns off on it's own. It usually turns off for minutes (between 5 and 15 minutes) and will turn on again.

We've tried turning the A/C off and on and have put the A/C on different speeds. The relay was also replaced and the problem persists. What could it be?
