Cut the car on it reads low coolant. After it warms up the numbers appear and start going up fast until the red light comes on, but the car does not overheat and fan comes on. Shot it with portable temperature gauge engine reads 186 but dash says 293.

It sounds like you have an engine coolant temperature sensor that is out and needs replacement.
