My truck stalls or cut out when it reaches 35 or 40 mph. What causes this to happen?

Does it start right back up? Have you checked the fuel pump? Have you checked the choke?

Yes it does start right back up. No I have not checked the fuel pump, but did think about the carb and the choke.

Okay, I have to ask, are you seeing black smoke from the exhaust? As far as the speed issue, it sounds like you're running out of gas. You may need to check how much fuel you are getting. It could also deal with the float in the carb or the needle and seat sticking.

Let me know about the exhaust. Let me know anything you can think of. The old ones are my speciality.

I only see a little bit of smoke when the engine starts not as it is being driven. I do not believe it is running out of gas. My question is how do I check the choke or the float to see if it is working properly?

The choke is at the top of the carb. It looks like a butterfly and when it is cold, it should close all but about 1/8 of an inch then slowly open as the engine warms up.

As far as the float and the needle and seat, the carb needs taken apart to check what is called float drop and then I would check to make sure the needle and seat are clean and working properly.
