How hard is it to replaced and should I replaced the thermostat? Does the thermostat for this model come with a sensor?

Hello,

It is not that hard to change out the water pump at all. Also, it would be a good idea to change out the thermostat at the same time because it will be one less thing to have to worry about breaking down later. The sensor that feeds information to your vehicle's Power-train Control Module (PCM) AKA, "computer" is called the Cylinder Head Temperature Sensor (CHT) and does not need to be changed until something goes wrong with it.
I have included for you below in the diagrams step by step instructions from the Ford Motor Company on removal and installation of not only your vehicle's water pump, but the thermostat as well, Please let us know how it turns out.

Thanks,
Alex
