Hello I want to change my exhaust and intake to high performance, would that put any load on the stock engine and transmission?

It shouldn't overload the stock engine, but it may disorient the computer, does the kit come with new sensors, for the intake manifold and the exhaust?

I haven't selected the intake and exhaust as yet, but I was wondering if you can advise me in that field. I don't want an exhaust that's too loud maybe u can let me know what brand in particular.

I would love to help you out but I am a factory technicians and I don't understand why you want to modify your engine. The factories spend millions of dollars in designing your car precisely, if you wanted a more high-performance vehicle you should have purchased the GTI, those are bad A$$, instead of spending additional money to make your Jetta into a GTI, my advice to you is sell your Jetta and buy yourself a GTI.
