My 01 Jetta just developed this problem. In the morning is starts and then dies. Starts and then dies. I can usually give it a good rev, then it dies. Then later on it's fine. As of 6:30 PM I went to leave and it did it again. This is driving me nuts because I don't know what it could be. Maybe a partially clogged fuel filter? A fuel pump going bad?

Is the Immobilizer (small car icon) light flashing on the dash when this happens.
If so, you're key is going bad and the security system is not recognizing it.
Another possibility is a dirty throttle body. If it gets too dirty the computer won't be able to open it up enough to hold an idle. If this is the case it should be carefully cleaned and then the throttle body has to be adapted using a factory scan tool.

Ugh, so that means I would have to take it and get it professionally done. I can hear my wallet screaming already. Thanks though, because it seems to make sense about the throttle body as the throttle seems a little sluggish sometimes.

I think there is a trick out there to re-adapt the throttle body without a scan tool. I've always had access to a VAG scanner so I never needed to know.

Maybe a Google search for VW throttle body adaption will get an answer.

Good luck
