2002 Volkswagen Beetle 64000 miles

I recently got stuck on a steep hill in a snow storm in my beetle. I was trying to get off of the road & my rpms went really high (red line) twice for maybe 5 seconds each. As I parked, the red light that looks like a thermometer in water light flashed & started beeping. I did not drive the car agin until the next day after the snow had melted. About 10 minutes after driving the same red light & beep came on. I knew it was due for an oil change so I took it in. After my oil change, the same thing happened again, where my light comes on after the engine runs for about 10 minutes. Any idea what might be going on?

You failed to mention that you check coolant level or added any coolant, you may have air in the system or a faulty thermostat.
