I drove over a big piece of concrete in which tore parts of my undercar shield. There were no warnings, and the car was not driving funny. When I got home I noticed there was a clear odorless liquid dripping from the middle of the car more towards the passenger side.

Those shields are great at trapping dirt and moisture under the car which causes them to rot out faster. In your case the liquid is likely from the A/C drain and isn't anything to worry about. It now has a different area to drain out than it did.
