What could cause oil to be in the radiator water of my truck?

head gasket.

head could be racked or timing cover gaskets could be bad. i would start there cause they are like 20 bucks and only take about 1 1/2 hrs to change

right. you have coolant and oil passages behind the timing cover, in which o-ring gaskets and a paper gasket may be the only thing seperating the two. therefore becomes easily degradated
