Temperature gauge/ac button will flash?

So the temp gauge used to go to 210 which is normal for this car. Every now and then it fluctuates between 0-210. And everything still works, Also every now and then the ac button will flash and not turn on and the temp gauge will be at 0. When I turn the car off, the fans stay running for safety. Doesn't pull any codes.

Hello,

This sounds like a classic engine coolant temperature sensor issue. I would swap out the sensor and see what happened, drain the coolant first. Here is the location. Check out the images (below). Please let us know what happens.
