I am looking to restore this vehicle by replacing it with a brand new engine and transmission. My question is since my car has over 300,000 miles of wear and tear what other components under the hood i.E, power steering, water pump, radiator, should I also replace as well?

Yes all of the above, basically everything that is a normal wear item should be replaced even the fuel pump.

This is what I would do,

water pump
fuel pump
fuel pump relay
power steering pump
Ignition coil
Ignition module
plugs
plug wires
Ignition switch
radiator
radiator hoses
heater hoses
thermostat
serpentine belt
belt tensioner
alternator
battery
starter

That should do it, please let us know how it goes.

Best, Ken
