1999 Pontiac Grand Prix My temperature

I have a 1999 Pontiac Grand Prix GT V6. Everytime I am stopped at a traffic light or stop sign I notice the temperature needle starting to rise slowly, but as I drive off it goes down instantly. I have removed my thermostat completely and drained my radiator many times and refilled it with numerous types of radiator fluid and changed the top hose that goes from the radiator to thermostat and water pump and still no success. It almost goes to the last bar on the gauge, but again as I drive off it goes down. Also my fans do work.

Check to see if the cooling fans are operating properly. Good way to see if its the fan motors is to see if both fans work when a.C is on.

Correction I just tired it now let AC blow for about 5-8min and still fan did not come on but again the car was not warmed up at all it had been off for about 4hours.

It doesnt matter how cold the vehicle is. When its running and you command the a/c on the cooling fan are suppose to come on. Try running the car with a.C on and lightl tap the cooling fan motors. If they come on you may need new motors if not check fuses and relays to fans.
