How can you tell if a head gasket is blown and how do you fix it?

Perform a compresson test, if one or adjacent cylinders are low, then headgasket is bad, or head is warped.
This normally happens when engine is overheated.

Head must be removed and new gaskets installed. Head must be checked for warpage.
