1992 Pontiac Grand Am Head gasket possibly?

Hi, I got a 1992 grand am, Quad 4, 4 Cyl. 2.3L. Well when I first got it, the car kept running hot, so I took it to the shop and they said the fan was unplugged, So they plugged it back up and added some water, Ok, so I was driving and notice they TEMP Gauge went up to the red area close to 280 and then it would move back to 220 line, So I had a mechanic to come over and check it out, so what he did was he waited when the TEMP gauge was down to 100, when the engine was cooled down, Well he start it up and press the acclerator revving the engine and it shot shraight up to the line behind 280, He said my thermostat is bad, So I went later to get a new one and have it replaced, and so far the car was back to normal, the TEMP gauge hand moves to the line after 100, So it was normal, So a couple of weeks later when u press the accerator and the car acts like it dont want to go, so I took it to an another mechanic and he took some pipe off or something like that and it was roaring in a good way, ok that was fixed, Then I notice in the back of my tail pipe was smoking black smoke, getting all on the back of the left tail light globe or plate, (what ever you want to call it) So one hot summer day, I was going to drive 23 miles to go get someone, I notice the TEMP gauge started to creep up to 220, so I was like wow? I havent seen it go up to 220 in a while, so I my way back home I was driving like 70mph, and notice the TEMP gauge hand was creep more to the right, so about a few minutes later, it shot up in the red area before 280, so I pulled off at a autozone near the exit, so I put some water in the cooler resovour jug, cause I dont have a raidiator top cap where you put some in the raidiator, well the thing I like about the radiator fan still runs when the car is off, (cooling the engine) so as I pulled off head back home, I notice my TEMP Gauge shot back up to 220 again, then move to the redline before 280, then it hit 280 and the fan stop working adn the car shuts off when I pulled over to a friends friends housenand put some more water in the resoiver jug, well water was coming out fast down by the passenger side by the engine, So I figure oh its probaly a hose leak, check all of them and nothing, so it kept running hot, and it wouldnt keep no water, So the next day I went to go get something to eat, I was hard starting up the car, took 15mins to get it running, so I was driving and notice it when I was pushing on the gas, the car was stalling, so I push the pedal all the way down and it took off fast, so I said let me get my car back to the house, later on I had a cousin who is a mechanic for several years and he said it was the head gasket blew, So am like oh no, I talk with my father which he is a mechanic too, he thought it was the ignition coil, & spark plugs, replace spark plugs and try starting it up, it wants to start up but doest, its not the timing, thank god, or I be in a major sitution. So I put more water in the resouver jug to see if I can see where its leaking? Well I dont see nothing? So I am thinking earlier it was leaking on the passenger side under the car, and I thinking and then I look at the oil stick and notice the oil was above the full line and it smell watery-ish, so I figure it out, all this water I am putting in here is going in the oil, wasnt using any anti-freeze, so most likely its the head gasket?

It sounds like the pipe the mechanic took off may have been converter or plugged muffler, the black smoke is a very rich running engine to much gas. Water in oil is not good, you could have a bad head gasket or cracked head or engine block all very expensive repairs.
