My check engine light came on today and is flashing - I have done some research and it appears that it may be the catalytic converter. If I drive the car will it stall and leave me stranded on the road? What kind of damage will it cause?

No it wont, if it does die out, you can leave it off for a feew minutes and the convertor will be relived of its pressure,

driving with a bad convertor your engine could get bad gas mileage due to excessive exhaust pressure.
