I changed my serpentine belt but had to un-hook radiator reservoir to do so. Now my coolant light is on and my thermostat does not seem to be opening. I hooked the sensor to the resorvoir back up as well. Could I have somehow messed up the sensor and would that cause the thermostat to be non-functional? Somebody please help me!

What makes you think the thermostat is not opening? I think that because you unplugged it, it triggered the light, but will go off eventually once it goes thru whatever drive cycle it may need to. Try unplugging the negative battery cable for a bout fifteen minutes and then see what happens, ecm, may need to do its component check again because it was unplugged, sensors I tell you.
Let me know what happens
